Milk is an agricultural product that is extracted from animals during or shortly after pregnancy. India is the world’s largest milk producer, and it is a leading exporter of skimmed milk powder, while exporting a small number of other dairy products. The growing demand for dairy products in the domestic market and the growing gap between demand and supply could lead India to become a net importer of dairy products in the future. United States, India, China and Brazil are the world’s largest exporters of milk and dairy products. Worldwide, more than six billion people consume milk and dairy products.

Food product for humans

In many cultures, especially in the West, people continue to consume milk after infancy, using milk from other mammals (especially cattle, goats and sheep) as a food product. People process milk into a multitude of products, such as cream, butter, yogurt, kefir, ice cream, and cheese. Modern industrial processes use milk to produce casein, whey protein, lactose, condensed milk, milk powder, and many other food additives and industrial products.
Whole milk, butter and cream contain high levels of saturated fat. Lactose sugar is present only in milk, and several tropical shrubs. The enzyme necessary for digestion of lactose, lactase, reaches its highest levels in the human small intestine after birth and then its level begins to decline, unless milk is consumed regularly. Those groups that continue to tolerate milk, however, have often shown great creativity in the use of milk, not only cattle, but also sheep, goats, yaks, water buffaloes, horses, irvas and camels. India is the largest producer and consumer of beef and buffalo milk in the world.
In addition to milk in the human diet, dairy products are also used, such as: cream, butter, yogurt, cheese, kajmak, sour milk, cheese, kefir, cheese… In addition, milk is used as an additive for many products (for example, for production chocolate) or many other additives and industrial products.
